Proud mom!


So proud.
I’m pretty proud of my little man. 
We had a really good day today so I’m enjoying it .. (over & over again)!
First - 
I was driving through the pick up line to get him today and I saw him sitting outside on the floor. This cute little girl next to him (that he had been talking to) got up to get into her car. Instead of getting in she ran back and gave Dylan a HUG then gladly got into her car. He saw me and started smiling so big his dimple came out .. and then he started shaking his head, as if he was telling me “Shut up mom. It was nothing.” BUT of course I had to ask! So I did! And he didn’t say much. Which didn’t surprise me. Haha. I’ll find out soon enough ;) 
Second - 
We had to stop at the store for some last minute dinner supplies. We were walking & talking when all of a sudden we hear “Dylan!” and a little boy waves. His mom gives us the cold shoulder but he was so cute. So Dylan quickly said “HI JOHN!” (“MOM - he’s in my class!!”). I told him he could go over and talk. He didn’t want to. I walked over, in hopes that his mom would say hi but she didn’t .. we said bye bye and walked on. 
Third - 
Going to sleep tonight was fairly easy and drama-less. Both babies were too tired I think. I started my computer so I could work on homework .. I got into PJs and all of a sudden Dylan’s in my room. He said “Sweet dreams mama” and I gave him a big bear hug. He happily walked off. 
Two minutes later and he’s back. Instead of sternly telling him to go to sleep, I invited the conversation and he went on talking about a little boy who peed his pants in class. Poor guy. And then he told me how his school is at dismissal time. We talked for a couple more minutes and then off to bed he went. For good this time. :) 
Today was an exceptional day.
And I made super yummy taquitos for dindin. (I’ll post a picture soon). 
Life is grand.
I’m grateful. So grateful.
I’m trying to live more in the moment and right now - right now, this moment .. it’s fabulous.

Here's a before and after picture of me!

I didn't start eating healthy till January of 2012 but Paleo has changed my life!!
Quick & easy dinner just for you viewers! (Ok, and everyone on my Tumblr page and all my friends and family on Facebook). Haha.

Brown one pound of ground beef.
Brown one package of mild Italian sausage.
Sauté a chopped up green pepper.
Mix together.
Add a can of Organic diced tomatoes and mix again.

Done!

Serve over a bed of cauliflower rice. If you don't know how to make that - keep reading!

Cauliflower: Shred cauliflower in a cheese grater. Sauté in a pan with any seasonings you desire.
Takes like 10 minutes. It's awesome!

Two very important staples in my house, now that I've gone Paleo.

They should be your staples too! (Or not, if you're not Paleo and all - but remember, Paleo is the new black.)

Coconut Oil is used in SO many recipes and "Cage Free" eggs are so much better for you!
You can tell the difference just when you make scrambled eggs! They're seriously so much brighter and healthier looking. 

Go. Buy some. Now.


Chicken & Rice


Chicken & "Rice"

I picked up some fried chicken from Publix.
You don't need to tell me that fried chicken isn't Paleo. I know it's not.
That's why I took off the skin and threw it away.
I know - I thought the world was ending. 
But, somehow, I survived.

So back to what I was saying .. 
I ripped off the skin and ate it with some rice.

If you look closely (or read my Facebook post several weeks ago) you'd know that the "rice" isn't rice at all. 
It's shredded cauliflower.
Yup. You read that right.
Shredded. Cauliflower. *

Super quick meal and Dylan ate THREE pieces of chicken! 
(No, he didn't rip off the skin. He crunched it. In my face. Mean boy.)





* Cauliflower Rice - To Make: Simply shred your head of cauliflower using a cheese grater. You can grate it right into a little pan. Do as much or as little as you want. Then add any spices. (Salt, pepper, fresh herbs, etc.)
Put your pan on medium heat and allow it to cook for a couple minutes. Just eye ball it. If it looks yummy, take it off and eat it. It doesn't get too hard or anything.
The kids didn't eat a whole lot of it tonight but the first time I made it, they bought my lie .. they really thought it was rice! Hahaha. I know, I'm a mean mom. (I guess that's where my kids get it from ;) Haha).


Paleoooooo!

I've been having a hard time lately.
With my increase of hours at work, I haven't been planning my meals properly .. 
And I've been paying for it.

When the book tells you to plan one day a week to prepare meals - take it seriously & do it!
It would be such a great help for you! 
One day to prepare veggies & fruits .. get everything cut up and in containers so that you can just grab and go. 

I'm going to start doing that. 
By the time I get home from work I am in NO need to prepare a meal. 
And lately I've been eating out a lot .. and although I'm making WAY better choices than I have, they're still not the best.

Anyways.
I'm going to post some more pictures & maybe some recipes .. 
If I'm feeling nice. :)

A Paleo life for us!


First & foremost: RESEARCH this before you decide to do it!
I read this book (almost all of it, actually) and I was still on the fence about it. 

How would my kids adjust?
Could I stick to this if I can't stick to any other diet?
Am I destined to be a fatty my whole life? 
(Ok, that last one was a joke. Haha)

But, seriously .. check it out. You should check anything out that you seriously wanna do.
I don't like that it's called Paleo DIET - because it really is a lifestyle change.

If you're ready for it - go for it! 
I'll support you even if no one else does. ;) Haha.

This is the first book I read & it's great! (Plus it includes recipes!)
Then there's the bible .. 


Seen here at the top right. 
Everyday Paleo - in all of it's glory, is just one fabulous book.
I bought it purely because this woman is pretty & she has adorable kids.
THEN I read it and was like "WOW, I'm glad I judged this book by it's cover!". 
The recipes are great and it provides food that people will actually eat. 

Like this, my first Paleo recipe from this book: 

Stuffed Peppers! 

Um .. yes, please! 
(I will make another post just for this recipe, because it's AH-mazing!)

As both of these books suggest, DEFINITELY clean out your kitchen. 
That is BY far the most important "first" step to take (besides reading up on it)!
If you don't have it in your house, you're less likely to buy it. 
That little person inside of your head will nudge you when you're about to buy a candy bar and say "Hey, fat ass .. drop it. You're a Paleoista now!" ;)
